In honor of Thanksgiving this week, here's a delicious turkey meatball recipe that reheats really well and goes very nicely with white rice! This recipe makes roughly 45 meatballs.
Ingredients

2lb. Ground Turkey
1 cup of Whole Wheat Panko Bread Crumbs
2 Eggs
1/4 cup Chopped Green Onions
1/2 tsp. Garlic Powder
1/2 tsp. Salt
1/2 tsp. Black Pepper
[sauce]
1/4 cup Sriracha
3 tbsp. Reduced Sodium Soy Sauce
3 tbsp. Rice Vinegar
3 tbsp. Honey
1 tbsp. Grated Fresh Ginger
3 Cloves of Garlic, Minced
1/2 tsp. Toasted Sesame Oil
Preheat oven to 375°F.
Combine ALL OF THE INGREDIENTS listed under [meatballs] in a bowl.
3. Once all those ingredients are mixed really well, you'll be ready to make your
meatballs. First, go ahead and get a large baking pan to put your meatballs on and
make sure to spray it with cooking spray. The meatballs should be roughly 1-1 1/2
inches and spread a little bit apart.
4. Put the meatballs in the oven and let them cook for 25 minutes.
[ The sauce takes about ten minutes to make, so wait about fifteen minutes after the meatballs have started cooking to start making the sauce. You want them to be done at roughly the same time, but if one's done a little sooner than the other it's not a huge deal.]
5. Combine ALL OF THE INGREDIENTS listed under [sauce] in a saucepan, bring
it to a boil (whisking continuously), and then bring it down to a simmer while
continuing to whisk for 8-10 minutes. The sauce will get a little bit thicker (but not
super thick).
6. Once your meatballs and your sauce are both done, add the meatballs to the saucepan and cover them in sauce.
7. For the rice, I just made Minute White Rice the comes in a box. The directions are
on the box depending on how much rice you want. You need one cup of water for
every cup of rice you make. You'll boil the water, put the rice in there, and wait a
few minutes for it to be done.
8. Put it all on a plate, and enjoy!
