Chicken Fettuccine Alfredo




In honor of the first time making this without crying, here's my Chicken Fettuccine Alfredo recipe!

Ingredients

  • flour & eggs (for homemade pasta! if you aren't making the pasta from scratch, just get fettuccine pasta from the store)

  • chicken cutlets

  • garlic powder

  • onion powder

  • butter

  • 1 cup of heavy cream

  • 1 cup of parmesan cheese

  • salt & pepper

  • parsley

 

part one - making homemade fettuccine

disclaimer: i don't really do exact measurements when i make pasta dough so the directions for this are a bit vague

  1. This gets really messy, so I highly recommend putting cling wrap on whatever counter you're making this on before you start.

  2. Put roughly 1.5 cups of flour on the counter. Make it look kinda like a mini-volcano, like so:

3. Now, add one egg in the center of your flour volcano.

4. Mix the flour and the egg, starting from the edge of your flour volcano and kind of covering up the egg as you mix it in.


5. When you've got the first egg mixed in, add a second egg, and more flour if necessary. The end goal of this part is to make a ball of pasta dough. It shouldn't be very sticky, but not too dry that it's crumbling and falling apart. The great thing is that if you've added too much egg, you can add more flour to balance it out, and vice versa!


6. When you feel like your dough is good, wrap it in cling wrap and let it sit for 15 minutes. If you want more or are feeding a few people, I would recommend making two pasta dough balls.

7. After fifteen minutes, take your pasta dough balls out and put a touch of flour on them so they don't stick. Put a little flour on the counter, and on your roller as well to avoid the dough sticking to the surface.


8. Next, you're going to use a roller to flatten the dough. You wanna get it pretty flat, but make sure it's not so thin that it's tearing. I use flour throughout the process to avoid stickiness.

9. If the flattened dough is really long, and it should be, you'll want to cut it in half before using the pasta maker.


10. You'll put the dough into the pasta-maker in the fettuccine slot and crank that wheel!

11. Do this with all your dough, and now you have your made-from-scratch fettuccine noodles!! Set them aside for the time being.


part two - making the rest of it

  1. First, go ahead and start boiling a pot of water. Whenever it starts boiling, put your fettuccine pasta in there to cook.

2. Next, season your chicken generously with garlic power, onion powder, salt, and pepper.

3. Melt butter in a pan and add your chicken.

4. Cook until they are golden brown. Once they're done, take them out and cut them into small strips. Set them aside for now.

5. Next, put the heavy cream into the same pan that your chicken was in and reduce (thicken) it for 5 minutes.

6. After 5 minutes, add 1 cup of parmesan cheese to the pan and stir it.

7. Once the parmesan cheese is mixed in, add your fettuccine pasta and your chicken strips and mix it all together.

8. Now put it in a serving bowl and add some parsley for pizzaz!

9. Get yourself some pasta for your plate, and enjoy!
